This is a fairly quiet week at our house -with a busy weekend ahead with my family in town. We eat lots of salads in the summer. Here is one of our favorites (from a Weight Watchers recipe book).
Pasta night - nothing fancy here, one of the teens can do this meal!
bbq night - usually burgers and chicken (with salad listed below)
Tacos (with extra chicken from bbq night)
Southwestern Layered Salad
1 can black beans (rinsed and drained)
1/4 cup prepared salsa
1/4 cup choppped, fresh cilantro
2 cups chopped romaine lettuce
2 medium tomatoes, chopped
1 cup frozen corn
1 green bell pepper, diced
1 red onion, chopped
1/2 cup shredded cheddar
1/2 avocado, diced
2 slices bacon, cooked and crumbled
1/4 cup italian dressing
1. Combine beans and salsa and 2 T. cilantro in small bowl.
2. layer ingredients in 1 1/2 quart clear glass bowl (I use a 9 x 13 casserole dish) in this order:
bean mixture, lettuce, tomatoes, corn, pepper, onion, cheese.
3. just before serving top with avocado, bacon and 2 T. cilantro. drizzle with dressing.
