Menu Monday

Finals week at our house - which means the school year is half over - YIKES! I will focus on healthy snacks for after school and evening study sessions.

Humus with pita chips and veggies
Salsa with chips (and for taco night)
Asparagus spears

Meals:

Tacos (with salsa recipe from above)
Veggie Pasta (with lefover asparagus from above)
Tuna Cakes (with cauliflower and carrot puree - see below!)

I tried a new cauliflower soup last week and no one liked it. So I strained off the broth, and was left with some well seasoned cooked cauliflower and carrots and made this tasty (but not pretty) side dish to go with the tuna cakes.

Cauliflower Mash

1 head of cauliflower
2 carrots
salt and pepper
1/4 teaspoon onion salt
1/4 teaspoon garlic salt
1/4 cup water
1/2 cup heavy cream or milk

Cook veggies until tender
Puree in a food processor
In a saucepan combine all ingredients and cook over medium heat until thickened (add more milk or water if too thick) and heated through.
