Snack Attack

This is my favorite granola recipe so far. Granola is the perfect after school / before practice snack.  I like it with fresh berries for breakfast. The girls bring it to school and add it to yogurt. Steve puts it on his ice cream. I found this recipe in my Better Homes and Gardens Recipe Book. I cut back on the honey and butter.


Granola

1/2 cup honey (I use 1/4 cup)
1/2 stick butter (I use 3 Tablespoons)
1 cup oats
1 cup almonds
1 cup walnuts
1/2 cup flaxseed meal
1 cup shredded coconut
1/2 to 1 cup dried fruits (I used cranberries and apricots)

Heat oven to 300 degrees.

Combine all ingredients except fruit in a large bowl and mix well. Spread on a large jelly roll pan and bake for 40 minutes, or until golden brown, stirring once after 15 minutes. Cool. Add fruit. Store in an airtight container or ziplock bag.
