We have finished our first week of school. I don't think I made one meal I had planned on last week! So I am changing my approach to blogging my weekly meal plans. I will actually be sharing recipes and meal ideas from the last week. What worked, what didn't, a picture or two and a recipe.
I try to plan 3-4 dinners every week with a night of leftovers to round out the school week. If you have a family friendly recipe to share please email me at sharon@shaggybaggy.com.
1. Chicken Tacos
2. Grilled Chicken Sandwiches (with artichoke dip). The girls had the artichoke dip with chips and veggies as an after school snack and the sandwhiches for dinner.
Artichoke Dip
1 can Artichoke Hearts, chopped
1 8 oz. package Cream Cheese
1/2 cup Mayo
1/2 cup Sour Cream
1 Cup Parmesan
1/2 to 1 cup Chopped Spinach
Combine all ingredients. Bake in 9 x 9 inch baking dish at 350 degrees for 40 minutes.
For the Chicken Sandwhich I spread artichoke dip onto thick crusty bread and layered with sliced, cook chicken and grilled onions. Grilled the sandwhiches until brown. Very tasty.
3. Apricot Ginger Chicken Thighs served with roasted asparagus spears. Fan fave at our house! I always use chicken breasts.
